RHUBARB PUNCH

Enjoy this first sign of spring with a "Punch". An easy to do enjoyable refreshing beverage for taking a break from the garden...

 10 cups chopped rhubarb
8 cups water
1 tablespoon grated lemon grind
2 tablespoons lemon juice
1 cup sugar


Place the rhubarb and water in a large pot, bring to a boil and simmer until rhubarb is tender. Strain the rhubarb from the water which should leave about 10 cups of juice. Add the lemon juice and rind. Mix the sugar with 2 cups of juice and bring to boil to dissolve the sugar. Once sugar dissolved, return to remaining juice and stir. Chill and serve.

You can add other juices to this or kick it up and have it with vodka!
